SHIRLS HEALTHY BREAKFAST BUNS
Makes 8-10 buns

Welcome to our healthy eating café

At our café we will be featuring an exciting and healthy recipe every month for you all to try. These recipes have been tried and tested many times and all our friends are raving about them! So come on in, relax, have a seat and try another deviously healthy recipe

These buns are so healthy try one for your breakfast, they are low fat, low wheat and high in oats (good tip is to keep them in the fridge to retain their moisture, they freeze well also and they taste great with a cup of lady grey!)

  • 50g (2oz) wholemeal flour
  • 110g (4ozs) oatmeal
  • 1 teaspoon mixed spice
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon bicarbonate of soda
  • 1 teaspoon freshly grated ginger
  • 1 apple grated
  • 50g (2oz) dried apricots
  • 50g (2oz) sultanas
  • 50g (2oz) chopped dates
  • 30-40mls fresh orange or apple juice
  • 1 tablespoon olive oil
  • 1 egg beaten

Method
1. Oven at 180c or 350f or gas mark 4.
2. Grease a baking tray and lightly flour.
3. Mix all ingredients together.
4. With floured hands make into balls and flatten into scone like shapes.
5. Place on prepared baking tray with a little space between each one
and cook for 12- 15 min's.
6. Allow to cool, keep in fridge or can be frozen
