MY HUSBANDS BAKED LOW FAT CHEESE CAKE!

As health promoters, Health Visitors know too well the importance of eating a well balanced diet which is high in essential nutrients and low in fat. We are expert in giving advice to parents on how to stay healthy and how to be a role model for our kids, by eating the right sort of foods and by giving the 5 a day message. However, sometimes we forget to think of ourselves and in our busy lives it can be time consuming to think of healthier options…… so here is a fabulous and easy recipe for you to try, believe me this one is absolutely delicious… and good for you to!

  • 10 Digestive Biscuits
  • 1 tsp cinnamon
  • 1tsp ground ginger
  • 50g melted low fat butter
  • 500g low fat cream cheese (as low as you want)
  • Juice of 1 large lemon
  • Rind of 1 large lemon
    (if you like lemon, its great with the rind of 2)
  • 150g of sugar lite
    (you can now buy half sugar and half sweetener)
  • 4 eggs

Method
1. Oven at 175c gas mark 4
2. Grease a round loose bottom cake tin
3. Place biscuits, butter, cinnamon and ginger in blender and blend to form fine crumbs
4. Press crumbs into bottom of greased tin
5. Cook for 10 minutes
6. While crumb base is cooking, in a clean blender/liquidizer, blend 4 eggs and sugar
7. Add lemon juice and rind to egg mixture, blend for a few seconds
8. Add cream cheese and blend for 1 minute, until mixture is fully mixed together
9. Pour mixture into cake tin on top of baked crumb base
10. Cook for a further 40 minutes.
11. Allow to cool before removing cheese cake from tin and chill in the fridge.
