BAKED PRAWN AND GINGER CAKES

I tried this recipe out at the weekend and it was a great success! These prawn cakes are perfect to nibble while waiting for the BBQ. They go great with an ice cold beer or glass of white wine and are very easy to make. My guests loved them… hope yours do to!

Makes 12-16
Oven temp 200c or gas mark 6

2 slices of thick white bread, crusts removed
250g or 9ozs peeled raw tiger prawns
1 red chili finely chopped
1 inch piece of grated fresh ginger
4 cloves garlic
2 tablespoon freshly chopped coriander
S+P
1 egg beaten

  1. Soak bread in cold water for 10 seconds and lift out and squeeze water out.
  2. Put prawns, wet bread and all other ingredients into a blender and blend until all mixed.
  3. With floured hands, roll mixture into ball shapes and place on an oiled baking tray.
  4. Place in oven and bake for 15-20mins, turning half way
  5. Allow to cool slightly and eat with a sweet chili dipping sauce.
